Starting a Coffee Shop - Equipment Needs

So you have decided on starting a coffee shop! Congratulations! In my coffee shop business plan package, I go into more detail regarding equipment but due to space here, I am only going to give you some basic ideas of what to consider when looking at your equipment needs.

First of all, do yourself a favor and DO NOT buy any used equipment unless you know the exact age, where it came from, who used it, and that maintenance records are verifiable. I am only referring to anything with a motor or compressor. Used sinks, tables, counters, etc are fine as long as they are in decent shape. All other equipment, be VERY careful!

Even if you get it from a friend, you might be assured by them that the equipment was maintained properly and often, however did they get it used and can they get that guarantee from whom they bought it from? And how old really is it?

As you may have guessed, I fell into this trap and had things breaking down when I did not expect it shortly after I opened my coffee shop. Yes even my espresso machine. I was in a bad spot then! Luckily I had access to a one group machine for backup and a local guy was able to fix the other fast but you may not be as lucky.

I eventually upgraded to mostly new equipment when, but this can be avoided by getting new equipment at the start. You will be glad you did it, trust me!

Equipment Needs

Cash register or POS computer? - A computer POS (point of sale) system is good there is no doubt about it. These are the ones that have the touch screen monitors and such. However, they are probably (and arguably) best for analyzing your sales and inventory only, and not much more. They do not speed up your customer line.

If you want one of these guys, be prepared to pay about 00 for a base system. The price goes up for multiple terminals and printers, monitors, a kitchen printer, etc.

In my opinion though, a POS fast food register that has price look ups (PLU) and department categories is sufficient for most coffee shops. Try to get one that allows you to download the information to your computer. Most have this feature today. It may, however increase your manual inventory and sales tracking if you have to put this info into your accounting software and spreadsheets manually but it can be a big money saver. If you get in the habit of entering the figures daily, you will not have a huge amount of data entry to do at month's end. You can usually get these types of registers for about 0 or so.

If you end up opening other stores, I think the touch screen computer POS may be the way to go then because it will make your management and inventory control much easier, and you can link all of your stores together and control them from one place.

Espresso Machine

This is the Mack daddy of the whole business, your life blood. DO NOT SKIMP ON IT! However, having said that there is the line of overkill you do not need to cross either. I say, two group maximum, if you need more power or want a backup, get a one group as well.

The feasibility of a three or four group is great but it's difficult to get more than one person working on them due to spacing of the group heads, etc. Ordinarily, you do not need more than one person pulling shots and making the espresso beverages anyway. It is almost impossible for one barista to use all four groups at one time so you be the judge! However that may be up to debate if you get REALLY busy. However, a two group is always my choice.

There are three basic types of espresso machines: Semi-Automatic, Automatic or Super Automatic. Well My choice is always the automatic because you can program them to cut off a shot at 23 seconds, or whatever you choose but still do it manually. The semi-automatic requires manual shut off by the operator.

The super automatic machine will grind the beans, tamp, pull the shot, shut it off and even discard the used grounds. Yes, I am serious. I believe you lose a lot of 'art' when you use one of these. You'd be surprised at the amount of people that love to see a barista set up and then pull a great shot. These super autos are also big bucks. But if all you want to do is move your cattle call through the line, this is the machine for you!

The boiler capacity should be large enough for a big rush, 9-14 liters should be sufficient. You do not want to run out of steam or hot water in a rush and with a smaller boiler that will happen! Trust me on this from experience!

Buy a machine based on the availability to get parts and service locally. Do not buy based on price alone, or 'coolness' or 'features' of a machine. They are all good these days. Features will not mean anything if you cannot get local service on your machine.

As far as water softeners, the choice to get a whole water system softener is going to depend on where you are located. In central Texas, the water is VERY hard but I chose to not soften my whole water system, just for the espresso machine. If you are not familiar with hard water, this is what causes lime build-up. It's a white, crusty looking build up that will kill your 00 or 10,000 espresso machine. It clogs up the piping that in time, builds up to the point of the water not being able to get through. Then your machine needs to be completely taken apart and de-limed. Not pretty and not cheap!

You will most likely have to have a complete de-liming performed several times over the life of your machine, however if your water is very hard and you do not soften it for your espresso machine, you will most likely have to have it de-limed at a minimum of once per year. This will get time-consuming and expensive, even if you learn to do it yourself. I had my one group de-limed for about 0 so do the math. Avoid lime scale build-up by getting a water softener.

Espresso Grinders

You will need one for decaf and one for regular espresso. There are several manufacturers and models. I will tell you though to be sure it's automatic and has a doser/coffee hopper. They make a doserless model that grinds right into the portafilter and though this is freshly ground espresso, it does not work well in a rush! The units with a hopper allow the hopper to fill with ground espresso and have a lid to keep out the air. The bigger units have a bigger hopper and vice versa. Also, these have a bean hopper that you can get about 2 lbs of espresso beans in.

Bulk Coffee Grinder

These are the types you see in the food store bulk coffee aisle. Be sure to get the full scale version, not the shorter one. The only difference I can see is the taller one is easier to get a bag under to grind beans for customers. The shorter one is not! Try to have one grinder for regular and decaf, and another for flavored coffee if you will serve it. Using the same for all three will make the regular and decaf coffee taste like the flavored coffee. This grinder will need proper maintenance and burr replacement after so many hours as well. Follow the manufacturer's recommendations on this.

Coffee Maker (drip)

Be sure to buy for your volume. Automatics are best as they are plumbed to a water line. Pour over units will you need to fill manually! The air pot brewers are the better fits because they brew the coffee directly into the air pots. There are single unit models and double unit models. You will save a lot of time especially in a rush, with a double brew unit.

Pastry Case (refrigerated and non)

There are several different sizes. Take your floor space into consideration but also buy for capacity and visual display. A nice, attractive unit that holds and displays a nice array of pastries is key for merchandising. Dual zone cases are a good idea because they let you have part cold, and part room temperature (dry case) pastries that do not need to be refrigerated.

Blender

There are several models to choose from but some have features you just won't need. Be sure to get a commercial blender. Consumer units do not have the heavy duty types of motors that commercial units have. That means they will break down a lot faster than a commercial one! I would suggest you give Vitamix a look here.

Sandwich Prep Unit

These come in single, double and triple door units. Of course, plan for your overall room but your needs as well. The larger units have more capacity inside the unit, but the bigger plus is the prep top area that has more compartments to put meats, vegetables, etc in. If you are planning on a regular deli and Panini service, I would say the double door unit would be good. You may even get away with the smaller one!

Under Counter Refrigerator

Do yourself a favor and get a double door unit. These are basically like the sandwich prep units but without the top compartments. The inside capacity should be big enough to hold a good portion of your dairy, as well as opened soy cartons, smoothie mix, bottled water and soda (if you do not have a larger unit or merchandiser for water and soda. Plan accordingly.

Storage Refrigerator

This is for the back of your shop. This will be your commercial refrigerator in the back area to house your back stock of refrigerated items such as milk, as well as your baking ingredients, food items, etc. There are double and single door units.

Ice Maker

Getting an ice maker that can make an average of 600-1000 lbs per day is good. It will give you enough and still be able to make more within 24 hours. In a busy shop, you'd be surprised how much ice you can go through: sodas, fruit smoothies, frappes, frozen chai.

Freezer

You will need one of these to keep your ice cream, and other food ingredients that can and need to be frozen.

Oven

Get this based on your baking level. A 1/4 size may be too small and a full size may be too big. The median unit is a 1/2 size and has 3 racks.

Convection oven? Most pastries, pies and other baking can be done well in a convection oven. That is an oven that has a blower wheel that disperses the heat evenly and faster throughout the oven. Therefore your baking time is usually cut in half.

Panini Grill

Cast iron (non-ceramic) with ribbed plates are the better units. With the ribbed, rather than flat plates you will get the 'grill marks' on the bread and that always looks impressive. I recommend a double plate unit so you can effectively grill up to four Panini at once if you have a large order.

Three Compartment Sink

This will be essential per most health departments for wash, rinse and sanitize. If you have a commercial dishwasher, it usually overrides the 3 bay sink. However, most restaurants have both. You don't need a big one, just one big enough to get your biggest 'washable' piece of baking or cooking hardware into.

Hand Sink(s)

Check your health department requirements because you may need a hand sink every so many feet or based on how many employees you have, or based on your floor plan. These are sinks only big enough to wash your hands in and that is it. That is why they are so small.

Furniture

Pick and choose what is in between comfortable and not. This will help you avoid squatters that love to stay all day. Ordinarily, people in your store is a good thing but not if they are taking up space and just being comfy! This will include your tables and chairs, as well as couch, wing hairs, etc. If you are an eclectic coffee house, good finds can be had at Goodwill and other resale shops.

Phone

Just get one that you can hear when it rings! A cordless phone is a great idea.

Radio System

If u can, get extra speakers and have one in at least all four corners for best sound quality.

Credit Card Machine

This is the swiper w/pin pad - If you accept credit and debit cards, this is essential. Usually they are purchased from your credit card processor. Leasing one of these is usually a rip-off. Try to buy it outright.

Prep Tables

These are stainless steel or aluminum and great to make a kitchen prep area. They clean easily too. They come in various heights and widths, with or without a backsplash and usually have a shelf underneath.

So there you have some information to get you started on planning your equipment needs for staring a coffee shop. Be sure you take your floor space into account when figuring the sizes of your equipment. Also be sure you account for your anticipated customer volume. Early planning is key to having the right equipment to begin with.

A Brief Tour of Coffee's Chemical Composition

Everyday millions of people around the world begin their day religiously with a morning cup of coffee. Though today we easily identify coffee in its beverage form, it wasn't always this way in the beginning. Throughout history, coffee has taken on several physical transformations, initially serving as an energy source when nomadic tribes combined coffee berries with animal fat as an early form of an energy bar. Later it was consumed as a tea, then a wine, and finally to the beverage we've come to identify today. Since the beginning, coffee has always been a product of great mystery, having been discovered accidentally in wild forests of Abyssinia (Ethiopia) and consumed in its native cherry form, then later, passed through fire to significantly alter its chemical state. And although coffee has been in existence for thousands of years, its only been in the past half century or so, that scientists have been able to truly identify and understand what exactly is contained in this mystical bean. To date scientist have identified over 1,000 compounds in coffee, which when compared to products such as wine of chocolate that are composed of a few hundred, pale in comparison to that of coffee. Luckily through advancements in technology, much of coffee's chemical make-up has been unlocked and we now have a better perspective on the chemistry contained within this mystical bean.

[b]Single Serve Coffee Makers [/b]

Caffeine

For many, coffee drinking is simply a delivery medium for a potent alkaloid we have come to identify as caffeine or technically as 1,3,7 - trimethylxanthine. Although caffeine is strongly associated with coffee, its production within the plant kingdom is not exclusive but is seen throughout several other forms of plant life. Mate, for example, which is traditionally consumed in parts of Uruguay and Argentina, contains less than one percent by weight. Whereas, tea leafs (Camellia sinesis) which originated in China, contain almost three times the concentration of caffeine than Arabica, with Brazilian mate almost twice that of robusta coffee. Turns out that Mother Nature was quite generous when it came to distributing caffeine amongst the plant kingdom. But for humans, caffeine is very unique. Thus far we are the only living forms on Earth that readily seek caffeine for both its stimulatory and psychological effects. For all other life forms, caffeine is a potent toxin capable of sterilization, phytotoxicity and antifungal properties. As such scientists believe that caffeine, with its intensely bitter taste, has evolved as a primitive defense mechanism in coffee ensuring its survival in the wild for thousands of years. It's no suprise then, that the caffeine content of the more "robust" Robusta species is almost double that of the more delicate Arabica. The belief is that as insects attack the coffee cherry, they are deterred by the bitter taste of caffeine and simply move on to the next crop. Since Arabica is typically grown at higher altitudes than Robusta, where the attack of insects is reduced, Arabica has evolved to produce less caffeine.

Lipids

Lipid production and its subsequent survival after the roasting process play an important role to overall coffee quality. In general, most of the lipids exist in the form of a coffee oil and are located within the endosperm (bean) of the cherry, with only a small percentage deposited onto the outer portion of the coffee wax. Coincidentally, scientists have analyzed and discovered that much of the chemical make-up of coffee oil is very similar to that of vegetable cooking oils. As such, much of the lipid content in coffee remain unchanged and relatively stable even at the elevated temperatures associated with roasting. In its green form both Arabica and Robusta coffee contain on average 15-17% and 10-11.5%, respectively. But because Arabica contains about 60% more lipids than Robusta, many believe this stark difference is one reason responsible for quality difference between both species. Thus far, the claim has remained unconfirmed, until French scientists recently discovered a direct correlation between lipid content and overall cup quality. It turns out that as lipid content increases within the bean, so does overall cup quality. It's a very plausible explanation when one considers that the majority of important flavor compounds in coffee are also fat soluble.

Carbohydrates

Carbohydrates make up roughly fifty percent of coffee's total dry weight by composition. After roasting, remaining carbohydrates in the cup contribute to  mouth-feel or body, with some studies suggesting they are also responsible for the quality of the foam common in espresso beverages. Although there are numerous types of carbohydrates in coffee, perhaps the most important is that of sucrose. Sucrose, or more commonly known as table sugar, make up 6-9% in Arabica with a slightly less (3-7%) amount contained in Robusta coffee. During roasting, sucrose is readily decomposed and studies have shown that up to 97% of the initial sucrose content is lost even at light roasts. Its role during roasting is enormous with a large portion of the available carbohydrates participating in the Maillard and numerous others secondary reactions. One class of important byproducts created during roasting are those of organic acids. In its native green form, coffee contains negligible amounts of formic, acetic and latic acid. Though once roasted, there is a exponential increase in aliphatic acid production, along with a paralleled increase in coffee acidity. Since acidity plays an important role in assessing quality, it's no surprise why see typically see higher levels of perceived acidity in Arabica coffee than Robusta, due in part, to its higher sucrose concentration. Coincidentally, in the past year Brazilian scientists have identified a single gene, sucrose synthase, which controls sucrose production in plants and may hold the key for cultivating higher quality coffee for years to come.

Proteins

Protein content for both green Arabica and Robusta coffee vary between 10-13% and exists as free or bound proteins within the coffee matrix. Although actual concentrations can vary, there are a number of factors that can affect free protein content, including improper storage which may increase free proteins levels and lead to detrimental effects on quality. During roasting, proteins combine with carbohydrates in what is perhaps the most important reaction for all thermally processed foods - the Maillard Reaction. These set of reactions, discovered by a French chemist in 1910, is what is largely responsible for transforming the mere handful of compounds found in green coffee to the complex matrix that coffee is today. As temperatures reach 150C (302F), the Maillard reaction propel free proteins in coffee to combine with reducing sugars, ultimately leading to the formation  hundreds of important aromatic compounds. Of these, pyrazines and pyridines have the greatest aromatic contribution and are responsible for the distinct maize/nutty aromas found in coffee. The reaction also leads to the formation of brown-colored polymetric melanoidins - the compounds responsible for coffee's color.

Coincidentally, this is the same set of reaction that give rise to the alluring aromas we generate when toasting a loaf of bread or grilling a piece of steak. Although many of the byproducts created during the Maillard reaction are beneficial to coffee, in other agricultural products, these set of browning reactions can be a serious detriment to quality. In the cup, proteins also play a role in taste by forming secondary compounds during the roasting process. It turns out that the majority of coffee's "bitterness" is not due solely to caffeine, but rather bitter compounds produced during the Maillard reaction. Caffeine, as intensely bitter as it is, accounts for only 10-20% of coffee's total bitterness.

How to Import Green Coffee From Origin Countries

Importing starts with green coffee that is completely processed and ready for export from the origin country. Typically, shipped in 20 foot containers of 275 to 320 bags (70kb or 60kg) or less. It could also be loaded bulk, therefore enabling more beans to be shipped, lowering the shipping costs on a per pound/kilo basis.

[b]Single Serve Coffee Makers [/b]

From the USA, specialty coffees are most often purchased by importers or individual roasters via an FOB Contract. FOB (Free On Board) means that the price paid by the buyer includes all of the costs in the exporting country, including processing, inland transport, warehousing, dock fees, export fees and loading the container onto the ship. Ownership passes from the seller to the buyer once the container passes over the rail of the ship. The ships captain prepares the Bill of Lading that you will present to your bank to prove the coffee is now on the ship.

The exporter will need a bank that can handle international interbank transactions. Preferably one that is experienced in export document requirements. If not well established at this type of transaction, the exporter will not want to extend credit to any buyer, but will require payment terms: CAD (Cash Against Documents).

A CAD transaction enables the exporter to have payment deposited into his bank account after presenting to the bank the required documents proving that the coffee purchased by the importer (buyer) meets the specifications in the coffee purchase contract/agreement. The exporter's bank will determine exactly what documents are required.

These documents may include:

- Ocean Bill of Lading (from the freight liner after the coffee is loaded on the ship)
- Weight Notes to identify the exact content and weight of that content
- Certificate of Origin (issued by the government Customs authority in India)
- Certificate of Fumigation (if required by importing country)
- ICO Certificate of Origin (Approved by the ICO: International Coffee Organization)
- Invoice sent to buyer identify the details of the purchase and $Value.
- Packing List from seller as evidence of the product shipped.
- Other agricultural certificates as dictated in your country

Typically, the exporter will use an Export Broker in the origin country who is expert in these matters and can arrange all of the issues involved in preparing the coffee and the documents for export. If a broker is the seller/exporter, then he will handle all of the required export documentation. The buyer/importer arranges for payment, ocean freight and transport insurance. It's also the importer's responsibility for acquiring all import documentation and arrangement in his country.

Of course, finding buyers is the key when importing for resell. For information to identify coffee importers, office coffee service providers and specialty gourmet coffee roasters in the United States, you can purchase a membership list from the Specialty Coffee Association of America or from InfoUSA.com. You can use networking sites like, TradeKey as well.

Note: there are always risks associated with importing. Although the importer may have received samples representing the coffee purchased, in most cases the actual coffee received will match the quality grade, type and source, every coffee lot is different, even from the same region and farm.

There are a few ways to lower this risk. One is to be sure you have a "green coffee contract" modeled after the Green Coffee Association Contract Terms & Conditions. Second, be sure to get an export sample taken directly from the contain prior to its being loaded onto the ship, since once the container is on the ship ownership transfers to the importer (FOB contract terms). Finally, when you purchase is large enough, personally knowing who your buying from and even visiting the country to physically select and monitor the export process is an option.

How to Import Green Coffee From Origin Countries

Coffee Varieties

It used to be that we had very little choice when it came to coffee varieties. Basically, you could choose regular or instant, with only a few brands of each available. In the last decade, however, coffee lovers around the world have been delighted by the increase in varieties available. These days, it's not unusual to find multiple varieties of coffee with more brands than you ever thought possible.

Today, some of the most popular varieties of coffee hail from different regions around the globe and each one has its devoted fans who believe it to be the best. The varieties are determined by the region in which they are grown and the length of time the beans are roasted.

One of the most popular varieties today is Kona coffee, which is made from beans grown in Hawaii. This coffee is generally an aromatic medium blend, with a hint of sweetness. Green Mountain (NASDAQ:GMCR), which markets single-cup coffee makers and coffee packs, yesterday after the close reported Q4 EPS of 47c, compared with analysts' consensus estimate of 48c. The company's revenue was also lower than expected. However, Green Mountain reiterated its FY12 EPS guidance of .55-.65, in-line with the consensus estimate of .62. The shortfall in the company's Q4 results was partly due to "changes in wholesale customer ordering patterns in... grocery and club channels," said Green Mountain CEO Lawrence Blanford, who added that the company was continuing to see strong demand for its brewers and portion packs. Meanwhile -- in an apparent reference to allegations questioning the validity of the company's accounting methods -- Blanford said the company was confident that there was no misconduct or wrongdoing, after its Audit Committee reviewed the allegations. In mid day trade, Green Mountain sank .52, or 35.09%, to .44.

Coffee drinks are quite the rage these days and the espresso and latte are among the favorites. Sure, you can get them at the local coffee house, but why not save some money and make them yourself?

Here's some tips on foolproof methods to the best espresso drinks around.

First off, you want to start with a good quality machine. If you are serious about your espresso, you need to spring for the best machine you can get. One thing to look for in a quality machine is to make sure it has a built in grinder as the grind of the beans is key to good coffee.

When you grind your beans for espresso or latte drinks, make sure you give it a good medium to fine grind. If they are too course the drink will be very weak, on the other hand if you grind the beans to fine the drink will taste bitter. A little bit of practice makes perfect!

To brew your espresso should only take 15 to 20 seconds. While your drink is dripping out into the cup, a foam should form on the top. When you see that the water coming out is a whitish brown color it's time to stop and reap the rewards.

The output should yield 1 ½ fluid ounces. If you have made more than that then your drink may be bitter.

Now that you have your perfect espresso drink, you can use it to make a latte. Lattes are great and can be flavored to taste like the ever popular mocha latte.

A latte is really espresso and frothed milk along with the flavoring. So to make a mocha latte, you will mix in chocolate syrup.

Start with a coffee cup and our about 1 3/4 ounces of choclate syrup into the cup. Next add 2 ounces of espresso and then top that with the steamed milk. Now stir the drink from the bottom so that the syrup mixes in. You can get fancy and put a smidge of whipped cream on top and even some choclate shavings if you have them. Enjoy!

It has an acidic effect and that naturally causes bowels to move irregularly and triggers constipation symptoms. Though it deceitfully looks like a laxative, it has the tendency to do just the opposite. It is the best known irritant of the gastrointestinal tract and naturally once coffee is ingested it starts its role of irritating the tract and causing constipation problems.

When you get out of our warm bed sheet of yours and think of the day ahead you already would have an uneasy feeling at the pit of the stomach. Because these products just do not cause constipation, but also diarrhea. Next time you wake up to a bedside coffee make sure that you wash it down the sink. It isn't going to help you freshen up.

Twelve Green Coffee Bean "Defects" That Will Damage Your Roast

Continuing with our Green Bean Series, this month we're going to take on defects in wet processed Arabica coffee beans; their cause, how to identify them and the effect they have on the roast.

[b]Single Serve Coffee Makers [/b]

Our "Roasters Tools - Green Bean Series" is a five part evaluation of how the characteristics of green coffee beans affect the outcome of the roast.

Roasters who consistently purchase strictly top grade premium coffees may have only rarely been confronted with defects, while the majority of roasters run across them much too often, even when presented with what is being sold as "Specialty" grade coffees.

The fact is, any one of these dozen defects will negatively affect the quality and alter the taste of the coffee you're producing. These defects are both identifiable and preventable.

The defects in this article are different than the "formation" defects we talked about in a previous article.

With that in mind, we aim to give you a very straightforward, to the point identification of what these defects look like, their causes, and how they can affect the profile of your roast.

The Twelve Key Defects To Look Out For:

Faded Beans Amber Beans Coated Beans Green Water Damaged Pulper Damaged Insect Damaged Immature Beans Foxy Beans Triple Center Cuts Stinkers Over-Fermented Diseased
FADED BEANS

Faded beans can be a result of either over drying or absorbing excessive moisture, depending on the environment. Either way, faded beans have a low resistance to environmental factors.

The effect on the roast is that they give a dull roast regardless of the roasting profile. The result is a soft bean with musty and woody flavors in the cup. And, the percentage moisture loss will be very high. The color of these beans is pale, whitish brown.

Normally, they result from beans that have a high moisture content (11% - 13%) and when stored in a warehouse, they'll tend to dry out. In the process of drying out, and because they are not in contact with direct sunshine, these beans tend to fade.

Instead of drying, these beans are actually rotting and developing molds inside. It's these molds that cause the beans to dry excessively, producing their pale to whitish brown color.

In addition, during the drying of wet or dry processed beans, the coffee can be negatively affected if not properly exposed to sunshine at the appropriate stage in the drying process.

Another cause is when coffee has been over-hulled using a hammer mill. In this case, the beans will come out with a dull color as a result of the outer cells being bruised and microscopic dust permeating the outer layer of the beans.

One final factor that can contribute to the fading of coffee is from older coffee that has been kept in a warehouse for two to three years or more, causing the beans to dry out, develop molds and other negative consequences.

AMBER BEANS

These beans have a bright shiny gold color. The cause is due to mineral deficiencies in the soil (including iron).

When you roast these beans, the cup will be lacking in acidity, with a flat harsh body and a bitter flavor. Also, the roast produced by these beans will be very dull in color.

COATED BEANS

These beans have a sticky silver skin caused by either overbearing or from being drought affected. The characteristics of these beans look whitish, rough and display microscopic lines from the silver skin.

In the process of roasting, you'll experience soft beans with excessive chaff. The roast can result in negative effects in the cup, including excessively high grassy, hay, earthy, woody, greenish and potato flavors.

GREEN WATER DAMAGED

These are fully processed beans that, when hulled, get in contact with water where a chemical reaction takes place, turning the beans a greenish color. This situation results in the beans becoming moldy and toxic.

PULPER DAMAGED

In the process of going through the pulping machine, coffee beans can get stuck, creating excessive pressure which causes the beans to become wounded.

These wounded beans will burst and then begin to slightly oxidize, become contaminated with water and over ferment, causing molds which result in earthy, leather and musty flavors.

In addition, the roasted beans will be uneven; some will be split, while others will appear round and mixed together with the solid beans.

INSECT DAMAGED

Berry moths inject the coffee cherry in the process of laying eggs, creating a black needle-like hole.

Antestia bugs damage beans causing them to bruise, which produces rough black to yellow-like colored spots.

Beans with these types of insect damage will give a soft roast and the beans will tend to shrink, creating dominant musty, alkaline and salty flavors.

IMMATURE BEANS

Picked under-ripe, often as a result of overbearing and drought affected conditions, the characteristics of immature beans include a rough surface and greenish color with a sticky silver skin and will usually have thin edges.

The roast will be very dull, with open center-cuts, soft beans and subsequently produce no acidity, heavy body, with greenish and grassy flavors.

These beans can also lead to Quakers in the roast; visible only after roasting by their pale appearance and flat peanut butter taste. Avoiding the purchase of immature beans is the best way to avoid contamination by these defective beans.

FOXY BEANS

As you might imagine, the name comes from the color of a red fox.

This rusty-red color is generally brought about by the beans being over-ripe. These beans tend to have a dead embryo and will give you fruity fermented and nutty flavors.

TRIPLE CENTER CUTS

These are deformed beans caused by malnourishment due to either drought affected conditions or lack of minerals, creating ragged beans with multiple center cuts.

During the roast, these beans can split open at their double or triple center cuts. They are fragile, soft and very permeable; which will over roast, creating a heavy body, a flat cup and a smoky, burnt taste.

STINKERS

Stinker beans can have a normal formation, but have a dead embryo and are yellow in color caused by over-fermentation and/or over-ripe. If crushed, broken or cut open when raw, they put off an order that's very unpleasant.

Even one or two stinkers in your roast can ruin the whole batch and give you a foul cup.

OVER-FERMENTED

These beans look soiled and have a tobacco color.

When roasted you'll get a pulpy, sour flavor and unclean, dirty cup; with a smell of rotting flesh or a cow shed aroma. If only slightly over-fermented, your roast may give sour and onion flavors.

DISEASED

These defects are brought about by the coffee being affected by various diseases like CBD (Coffee Berry Disease) and Leaf Rust.

When disease strikes a coffee farm, the mother plant will produce beans that are premature. This will affect the berry before it ripens, usually at the milk stage, and the beans will either not develop at all or only partially develop, with a very small berry or nonexistent berry inside the parchment within the cherry.

The deformed part of these beans looks somewhat brownish to very dark brown in color, often with deformities that resemble a chipped off piece where the bean is left with dark brown marks which go deep into the bean. The deformed part of these beans is generally flaky and ragged in formation.

These small diseased beans will be only partially developed, but can still be harvested and end up mixed with other beans of normal quality, then sold in the marketplace.

SO, WHAT DO YOU DO?

First, avoid these nasty defects when you're purchasing green coffee whenever possible. Second, educate your customers about the tastes inherent in a quality cup. An uneducated palette can even get accustomed to over-fermented, moldy, musty, peanut-buttery and other flavor defects that are actually toxic when ingested into the human body! AND, continue your quest to create the perfect roast!

How To Make Cappuccino In 3 Simple Steps!

Consider this the basic in the how to make cappuccino series. This article would highlight the steps to make cappuccino like the baristas you see in Starbucks and most coffee shops...

Before moving on to the 3 simple steps to make the cappuccino, do you know what is cappuccino? The key to understanding this, would be invaluable to learn how to make it. Knowing the components of a cappuccino enables you to visualize the procedures later.

Cappuccino is actually an espresso filled with 2 types of heated milk, i.e the steamed milk and the frothed milk. And, it is the frothed milk that gives cappuccino that classic look and it is also the "so difficult " frothing that lead world coffee bodies in using the froth to evaluate the skills of baristas.

The proportion of cappuccino is 1/3 espresso, 1/3 heated milk and 1/3 frothed milk. We would not touch on espresso in this article, as it warrants one entire article on how to get a good espresso, here we would highlight the other 2 components, the steamed and frothed milk, to better your learning in how to make cappuccino.

You would get steamed milk when the heat source (usually the steam wand) is injected into the milk, slightly below boiling point. As the injection of hot air is controlled to a minimal, there would not be any change in the milk volume except for a small amount of micro bubbles or froth.

To get more bubbles, i.e. to get frothed milk, place the steam wand at the surface of the milk, and this would creates more of the micro bubbles, remove the steam wand, when the froth has the look and feel of whipped cream.

Now, let's learn how to make cappuccino in 3 simple steps:

i. when using an espresso machine, while waiting for the espresso to brew, steam and froth the milk in a frothing pitcher. Once done, set it aside for approximately 30 seconds.

This is to allow the milk densities to separate. To speed up the process, you can try what Starbucks or most coffee shops' baristas are doing -by knocking the frothing pitcher on the table, this would separate the steam from the froth milk.

ii. Then, take a large spoon to keep the milk foam as you pour out the steam milk. As you pour the steam milk into a mug, do it slowly to prevent breaking the froth, and stop when you reaches 1/3 of the mug.

With the 1/3 steam milk done, spooned up the froth milk and put it on top of the steamed milk, this foamed milk should take up another 1/3 of the mug.

iii. For the last 1/3 of the mug, pour in the espresso down the middle of this foamy sculpture. And there you have it, a foamy cappuccino!

Not that complicated right? No need to ask how to make cappuccino like that Starbucks baristas anymore right? You can do it with 3 simple steps!:)

1. Stir sugar into espresso. Cool mixture.

2. Stir milk and pectin into espresso mixture until pectin is dissolved.

Starbucks. "Let's get together for coffee. Time for a coffee
break. Coffee pot goes off before my feet hit the floor. Travel
mugs for sipping coffee on your way to work. I'll just have this
chocolate bar to pick me up this afternoon." Caffeine - It's
everywhere! It's everywhere!

coffee or soda that they don't even consider the damaging effects

caffeine include dizziness, headache, irritability, muscle
tension, nausea, nervousness, stuffy nose, unusual tiredness and
jitters.

Too much (overdose) of caffeine can give you all sorts of grief
such as stomach pain agitation, anxiety, restlessness,
confusion, seizures, dehydration, faster breathing rate, fast
heartbeat, fever, frequent urination, increased sensitivity to
touch or pain, irritability, muscle trembling or twitching,
vomiting, sometimes with blood, fibrocystic breast disease,
ringing or other sounds in ears, seeing flashes of "zig-zag"
lights, and trouble in sleeping. If you are diabetic or insulin
resistant, caffeine causes your body to produce more insulin and
you don't want that. Caffeine makes all aspects of a menstrual
cycle worse. Isn't that bad enough some months?

The next time you experience any of the above symptoms, try
cutting back on caffeine. That may be all it takes to take care
of the problem. Reduce caffeine intake gradually to prevent any
symptoms of withdrawal. Cut back on your intake or combine a
mixture of caffeinated and decaffeinated beverages until you're
totally weaned off. People can, and do, survive ridding their
bodies of all caffeine. And they're feeling much better for
it!

How To Become A Christian Recording Artist

I have been asked by a few friends to compile a list of things that you need to do in order to make a living at Christian music. So, below you will find my personal opinions on what you need to do to succeed. I will warn you that these are my opinions and not the only way to succeed. There are always exceptions to the rule. However, these things have worked for me and thus I will share what I know. I am not going to sugar-coat anything so if you are easily offended, my apologies already. Before I start, let me dispel a few myths.

[b]Single Serve Coffee Makers [/b]

Myth #1 If I had a record label to support me, I could be full-time

So, So, So Wrong. I have a better idea, go max out all your credit cards, take out a huge loan, borrow money from your family and live off that while you build your career in music. What? No takers? Why not? In effect, that is exactly what you are doing with the label. You are living off of money that isn't yours. When you are out busting your butt touring to support your new CD, guess where the income goes? It goes to pay back that money they gave you to live on. I am going to say this once, STOP CHASING A DEAL! I did it for years. When I finally stopped and focused on making my music my business, the record deal found me. What you would be offered as a no-name/no-momentum band will be crap anyways. Go out and sell 10,000 copies of your self-produced demo and then we can talk about record deals and if they make sense. Until then, shut up and play.

Myth #2 I can just play churches/Christian events and survive

How can I put this? Christians are cheap! For the most part, Christians are not going to give you the financial support you need to survive. This will vary by region but all-in-all people think that ministry = free. Be careful how you present yourself to not get pigeon-holed here. You can be an artist that is Christian as well as a Christian artist. Let the music speak for itself, and when the opportunity presents itself, share what's on your heart. If you try to bill yourself as only a Christian artist, you will not be able to play enough to survive.

The fact is I can go play 3 hours of cover songs at a bar and make more money than taking a love offering from 200 people. Shocked? Don't be. It is sad but true. Be open to playing where you are needed, where your message is needed. If churches can't sustain themselves financially, how can they sustain you? The research tells us that 2% of people who attend church actually tithe (the full 10%). Those are not the kind of odds I want to bet my family's well being on.

On to the Top 5 list:

1) Be Competent

I heard Billy Joel once say that the reason he has been successful for so long is that he is competent. Most musicians are not as competent as they can be and thus fizzle out faster. If singing is your thing, take lessons, improve, study, practice! The same can be said for your respective instrument. If you are only ok at playing, ok isn't good enough for full-time. There are plenty of mediocre musicians doing gigs for free that make it harder for you to make a living. So, be better! Be much better. The back half of this is to accept the Truth. If your parents tell you that you are great, get a second opinion. If strangers come up to you after hearing you play and fawn over your music, now you are talking!

2) Be Unique

There are many good performers out there. What will separate you from the pack? Is it your vocal style? Your guitar playing? There needs to be something that makes you, you! Whether it be using loops, a different tuning, a particular look or whatever; keep people watching and wanting to see what you are going to do next. A great resource for creating memorable moments is Tom Jackson seminars. I have had Tom's home course for 4 years and refer to it often. I build my set lists around his formulas. Guess what, it works! You don't have to reinvent the wheel, just research and study wisely. Find yourself before others find you.

3) Have a Great Recording

So, you have practiced hard, prepared a good show and created moments to remember, now what? If you do these things well enough, others will want to remember as well. You need a recording of yourself. This is the first true key to Full-Time. A good recording will get you gigs, a bad recording will not. Should you record in your home studio or go to a larger one? Good question. My experience is that most of us do not have the talent to create a good recording at home. Please note, good equipment does not equal good recording. You can have all the bells and whistles, but if you don't know how to use them, you are wasting money.

I used to have great equipment at home but I didn't know crap about using it to its full potential. I sold all of it and used that money to record with professionals. The results were fantastic and enabled me to have a quality product that was a true representation of what I sounded like. I used that CD to send to venues and book gigs. There is no doubt that it helped me to go full-time. A quick word about recording budgets, if you have a 00 to record as your budget, do fewer songs with better production. A great 3-song demo is much more valuable than an average 12 song LP. You will sell many more at each if they are great quality. The great quality will also get you attention of industry folks as well. Any prayer of radio play, etc. will only happen if the quality is great!

4) Be a Publicity Hound

You need to take every opportunity to promote yourself. Even the smallest opportunities can birth bigger and better chances to play. I started playing anywhere I could, parties, churches, youth groups, restaurants, charity events, business functions, bars, prisons, you name it and I've been there. Have a nice handout to give to people. Places like Club Flyers can print you thousands of post cards and posters very inexpensively. Use these to give out to everyone at gigs. If there is another band playing in your area that has the same style as you, go to the gig and hand out your material as people leave the venue. What?! Commando style? Yes, a full frontal assault on your prospective audience. Don't be an ass. Use your head, be enthusiastic and invite people to your next gig. Go visit your local radio station and offer to play for any events they might have coming up. Many times they have a charity event they would love entertainment for. You need to go looking for it. If you can afford it, hire someone like Ariel Hyatt at Ariel Publicity. She does an absolutely incredible job on a 3-month publicity campaign for about a thousand bucks. In the publicity world, that is dirt cheap. She can obtain press, reviews, radio play and is a wealth of knowledge to help you promote yourself. Heck, she even got us playing live on Sirius Satellite Radio! One thing is for sure, if you are going to wait around for the opportunities to come flooding in, you are not full-time material. Sorry.

5) Think out of the box

This phrase is overused but it does hold true. I have done several things that many would never have thought of to survive. For instance, I played a Holiday Inn once a month in their restaurant/bar. I played 40+ cover songs over 3 hours. My arrangement was that they pay me in Priority Points. These internal points are funny money for the hotels. Giving you 20-30,000 points is nothing to them. However, it is 2-3 free nights at any Holiday Inn for you. This is very valuable when you are on the road touring. Limiting expenses is the key to success. For the hotel, it is free entertainment. For you, it is free lodging.

A win-win situation for all. I also played many coffeehouses around the US. One of the coffeehouses I played also was a roaster, i.e. they roast their own beans and make their own brands. I offered to bring samples of their coffee to all the houses I play and drop them off. If the venue places an order for coffee, the roaster covers my lodging and meals for the trip. Pretty sweet right? Necessity is the mother of invention.

If you truly want to make your living performing, all of the above will help. However, if you are not willing to risk it all, don't bother. I don't want to rain on your parade and I understand we all have obligations. But if God has put a true calling in your life, there is nothing that should stand in your way. It is too easy to find excuses. I did it for years. And I was miserable playing part-time and experiencing small successes. Every second I wasn't doing what God put on my heart, I felt disobedient. If you don't feel the same way, that same indescribable pain that is in your heart, the pain that affects everything in your life, your work, marriage, relationships, etc.

Full-time isn't for you. And you know what, that is ok. Accept the truth if God calls you to part time ministry. Make the most of it. You can not force God's will. But for those of you who know that it is all or nothing. I salute you and pray that God gives you the courage to answer the call and leave all reason behind. I'll see you on the road!
